Whose meal prepping today?
I made these caramelized pearl onions with peas (both frozen!!!) with thyme and sage and I got the compliment, "These are the best peas I've ever had in my life!"
High marks, you guys! And they were super easy
Recipe:
1/2 of a bag frozen pear onions
1 bag frozen peas
1 T olive oil
Pinch thyme and sage (dry)
Salt and pepper
Instructions:
Heat oil in a skillet and add onions.
Season with herbs, salt and pepper.
Cook the onions until browned and fragrant.
Add peas, season again.
Sauté until just beginning to brown.
Enjoy!!

This was a mango salsa I made to go on top of fish:
2 diced mangos
1 diced bell pepper
1/4 diced red onion
juice of 1 lime
Pinch of red pepper flakes, salt and pepper
Put it on fish, chicken or a chip! It is fantastic
One of the best things about quarantine (in my humble opinion) is the time for self reflection and self-improvement!
I've been taking more time to read, get creative and figure out how to slow down. The book Self-Compassion by Kristin Neff, PhD, has been fantastic!!
Something I have working on during the forced slow down is being nice to myself . It's helping me enjoy my days more, not beat myself up for dietary "slip ups" (while still losing weight), and helping my business grow!

Berries are finally coming back in season as the weather warms (even though it doesn’t feel like it’s quite hit us yet). Either way, they are tasting amazing and I’ve been adding them by the nutrient dense handful to my smoothies!
